1 tsp oil
1 lb chicken breasts, cubed
1 large onion, chopped
1 can (15 oz) kidney beans, drained
1 bottle (12 oz) salsa
1 can (7 oz) corn, drained
1/2 cup chicken broth
1 1/2 cup minute rice
1/2 cup sour cream
1. Heat oil in large skillet. Add chicken & onion; cook until chicken is done.
2. Stir in beans, salsa, corn & broth. Bring to a boil.
3. Stir in rice & remove from heat. Cover & let stand for 5 minutes.
4. Stir in sour cream.
