Pineapple Rice

This rice sounds like a lot of work, but it’s actually easy & VERY GOOD.

1 cup long grain rice
one slice fresh pineapple
2 tbs olive oil
1/4 cup green onion, finely chopped
1 small clove garlic, minced
1/2 cup roasted red pepper, finely diced (omit this if desired)
1/4 cup pineapple juice
salt & pepper to taste

1. TO COOK THE RICE: Bring 2 cups water to a boil, add rice, cover & simmer for 17-20 minutes. Set aside.

2. TO PREPARE THE PINEAPPLE: While rice is cooking, preheat a skillet until very hot. Add the pineapple slice & cook over high heat, for about 2 minutes per side or until brown (or you can grill it). Remove from skillet & cut into a fine dice. Set aside.

3. TO ASSEMBLE THE RICE: In a sauté pan, heat the oil for 30 seconds. Add the green onion & garlic & sauté for a minute or until the green onion is tender. Add the pineapple, roasted pepper & pineapple juice; reduce until the liquid has almost entirely evaporated. Season with salt & pepper to taste & stir this mixture into the cooked rice.
