It Ain't Easy Being Green
Today we're making Green Chile Chicken Enchiladas. Yum! Here's the mis-en-place; that's fancy-talk for "gather up all yer stuff!"
First, give your green onions a little chop.
Then, remove seeds from the jalepeno. If you're feeling like taking a walk on the wild side (like me), don't wear gloves. And if you have a paper cut on your thumb that you forgot about (like me), you'll end up screaming and jumping up & down! Have fun!
Chop the jalepeno really finely. I was lazy & mine was pea-sized.
Shave the cilantro off the stems, just like Barefoot Contessa taught ya. (what? you don't watch Barefoot Contessa?!? For shame.)
See, it comes right off with a sharp knife!
Chop up that cilantro...
...
and throw it into the pan with the green onion & jalepeno in some olive oil. Saute for a minute or two 'til tender. It looks to be a very green meal, does it not?!
Add your shredded chicken & heat.
Then roll up the mixture in corn tortillas. Don't forget to pour the green chili sauce in the dish beforehand! And if ANYBODY knows the trick to rolling corn tortillas without cracking them, please speak up now!!!
Do try to exhibit some table manners as you scarf this down.
Green Chili Chicken Enchiladas
1 lb cooked chicken, shredded
4 green onions, sliced
2 Tbsp fresh cilantro
1 (or two!) jalapenos
3 cans (10 oz each) green enchilada sauce
corn tortillas
1 cup reduced fat cheese (or skim mozzarella)
2 cups lettuce, shredded
sour cream

Here's the trick to non-cracked corn tortillas-
Wet a paper towel (not soaking wet just damp) and wrap a few at a time in the paper towel. Stick it in the microwave and heat for about 10 secs. Then they are warm and bend without cracking. Voile. Non-cracked corn tortillas (it works, promise). My mom taught me years ago. ;)

I was going to tell you to stack up your corn tortillas then wrap with a damp paper towel, put in micro for one min. They are nice and soft.
But I think mique said the same thing.
My trick isn't low fat, but they taste wonderful - put about 1/2 inch of oil in a frying pan, heat until it sizzles when a piece of tortilla is dropped in, then with tongs or two forks, dip each corn tortilla in the oil just for a second, place on a paper towel. You can do about 4 per paper towel, then cover with another ptowel. It's the only way to go for soft tacos or enchiladas!

I forgot to make rice though, I'm eating this and thinking, this would go really good with rice. duh!!!
