Éclair Bars

These are a no-fail hit!

1 cup water
1 stick of butter
1 cup flour
4 eggs
1 (8-oz) pkg cream cheese
3 cups milk
1 large pkg instant vanilla pudding
1 (12-oz) cool whip

1. Bring water and butter to a boil; remove from heat & add 1 cup flour. Mix together with a FORK. (for some reason, a fork is the magic instrument; a fork is the only thing that mixes this correctly!)

2. Add 4 eggs, ONE AT A TIME, mixing each with the fork before adding the next one.

3. The dough should now resemble a thick paste. Spread on a well-greased cookie sheet; bake at 400 for 20-25 minutes. Check it regularly for air bubbles—pop with fork.

4. Meanwhile, for filling, mix together: cream cheese, milk & pudding. (mix together with blender until smooth)

5. Spread on crust—when crust is completely cooled.

6. Spread cool whip on top.

*This is best if made the same day your are serving it. The crust tends to get a little soggy overnight. If you are serving it at a party, definitely make it the same day your serve it!
