My good friend Kara gave me these fast & easy recipes. They're yummy & quick to make.

Chile Pie Casserole

2 and 1/2 cups corn chips, 1 onion chopped, 1 and 1/2 cups grated cheddar cheese, 1 can of chili.

Place corn chips in baking dish. Arrange onion and half of cheese over chips, pour chili over that, Add rest of cheese and bake at 350 for 15 to 20 minutes.



Quick Barbecue Beef Bake

1 lb ground beef, 1 cup chopped onion, 1 bottle BBQ suace, 2 c. grated cheddar,

Brown beef with 3/4 c. of onion. Drain, then stir in BBQ sauce. (it says the whole bottle, I usually use less.) Pour into 9X13 baking dish, sprinkle with cheese.

CRUST TOPPING: 2 c. Bisquick, 1 c. milk, 2 eggs.

Stir the bisquick, milk and eggs until blended. Pour over beef mixture, sprinkle with remaining onion. Bake at 400 for 25-27 minutes. (Until topping is done.)

Potato and Ham Casserole

1 pkg frozen hash browns, 2 c. cooked diced ham, (you find this in pkgs by the bologna) 1 can cheddar cheese soup, 1 c. sour cream, 1/2 c. grated cheddar.

Mix together and bake at 400 for 40 minutes. Sprinkle more cheese on top if desired.


Cheeseburger and Fries Casserole


2 lbs. ground beef, 1 can golden mushroom soup, 1 can cheddar cheese soup, 1 pkg frozen crinkle cut french fries.

Brown beef and drain. Stir in UNDILUTED soups. Pour into a greased 9x13 pan. Arrange fries on top. Bake uncovered at 350 for 50-55 minutes or until fries are golden brown.

Fast Broccoli Cheddar Soup

1 pkg of frozen chopped broccoli, 2 cans cheddar cheese soup, mixed with 1 can milk, 1/2 carton of sour cream

Heat the soup and milk, stir often so it doesn't scorch. Add the sour cream. When heated, add the broccoli. (Sometimes I will steam that in the microwave first.) My kids LOVE to have this served over a baked potato.
