This was on the noon news' cooking segment. SO GOOD.
Caputo's Restaurant, SLC
Ingredients:
4 chicken breasts cut into 1 oz. Pieces (about bite-sized), lightly pounded
flour for dusting chicken pieces
2 cloves garlic, crushed
1 oz. sun dried tomatoes, diced
1/2 cup olive oil
1/2 cup dry white wine
1/2 cup chicken broth
juice of 1 large lemon
1/4 lb. fresh mushrooms, sliced
2 Tbs. fresh parsley, finely chopped
2 Tbs. capers
salt and freshly ground pepper to taste
1. Lightly dust chicken pieces with flour. Heat olive oil in pan over medium high heat. Add garlic saute until tender, remove garlic and discard.
2. Add chicken to pan and cook until golden brown on both sides. Remove from pan, add wine and chicken broth, deglaze the pan.
3. Reduce by half, then return chicken to pan. Add dried tomatoes, muchrooms, salt and pepper, lemon juice, capers and parsley. Simmer for a few minutes until all ingredients are hot, serve immediately.
