Cream of Turkey Soup

Another good soup recipe from my mom. She created this one!

4 turkey breasts
3 carrots, cut thin
2 celery stalks, diced
1/4 – 1/3 cup onion, diced
handful of frozen peas
1 Tbs chicken broth granules
salt & pepper to taste
pinch of tarragon
pinch of celery flakes (optional, in case you don’t have any)

ROUX
4 Tbs butter
4 Tbs flour
1/2 tsp salt
1/4 tsp pepper
1 cup milk
1 cup heavy cream

1. Simmer turkey in enough water to cover until cooked through—about 20-30 minutes. Shred or cube & return to water.

2. Add rest of ingredients (except for the white sauce) & simmer until veggies are tender.

3. While soup is simmering, make the roux: Melt butter over low heat; blend in flour a little at a time & add seasonings. Stir until mixture is smooth & bubbly.

4. Slowly whisk in milk; bring to a boil & stir for 1 minute.

5. Stir roux into soup slowly.
