Bacon Potato Soup

1/2 lb. bacon
16 potatoes, diced
1 carrot, diced
5 cups water
1 1/2 Tbs. salt
1 buch green onions, chopped
1 tsp pepper
1/2 tsp. garlic powder
1 (10 oz.) pkg. peas
1 quart half & half

1. Brown bacon & drain.

2. Add potatoes, carrots, water, salt, pepper & garlic powder TO THE PAN WITH THE BACON FAT IN IT!

3. Cook over med. heat & simmer until potatoes are tender; stir occasionally until slightly thick.

4. Turn heat off & slightly mash. Stir often!

5. Add peas; let stand 5 minutes.

6. Stir in half & half, onions & bacon. Cook 15 minutes over low heat, stirring often.

7. DO NOT BOIL.

NOTE: If soup is too thin, add 1-1 1/2 cups instant potato flakes.
