This recipe is from Jacques Pepin’s cooking show.
Ingredients:
1 small onion
rice (in whatever amount you need)
chicken stock
broccoli spears (leave the stems long; they steam to tender & look pretty)
flour (for coating chicken)
1/4 cup apple cider (can use apple juice concentrate)
lemon
orange
fresh ginger (definitely optional)
pinch of: cumin, chili pepper, cayenne (also optional)
pinch of thyme
Rice:
1. 1 small onion, chopped: Saute in oil.
2. Add rice to skillet & brown with the onion.
3. Put rice/onion mixture in a saucepan with chicken stock & cook for about 45 minutes. (ratio: 1 cup rice / 3 cups stock)
4. Add broccoli for last 15 minutes that rice is cooking: lay on top of rice & let steam.
Chicken:
1. Coat with flour & brown for 10 minutes.
2. Mix 1/2 tsp flour with 1/4 cup apple cider & dash of water.
3. Mix the following ingredients in with cider:
• A strip of lemon peel (not zest! Just a strip w/ a veggie peeler!)
• A strip of orange peel
• Slice of fresh ginger, crushed (if you have it handy)
• 1/2 or 1 clove garlic, crushed
• Tiny pinch of: cumin, chili pepper, cayenne (all optional; sometimes I add these, sometimes I don’t)
• A few pinches of thyme—MY FAVORITE INGREDIENT
4. Lower heat, cover & cook for 10-12 minutes.
