1 can fat-free jalepeno refried beans
½ cup salsa
½ cup fat-free sour cream
2 tbs taco seasoning
2 chopped tomatoes
4 sliced green onions
1 can sliced olives
5 whole wheat tortillas
2 cups shredded mozzarella cheese
2 cups shredded lettuce
1. Combine beans, salsa, ¼ cup sour cream and 1 tbs taco seasoning. Mix well. Add green onions and half the can of olives. Mix gently.
2. Line a cookie sheet with foil and spray with cooking spray. Place one tortilla the baking sheet and top with 2 scoops of bean mixture; spread within ¼" of edge. Sprinkle with cheese.
3. Repeat layers of tortilla, bean mixture & cheese 3 more times. Top with remaining tortilla. Bake at 375 for 25-30 minutes or until top is golden brown.
4. Mix the remaining ¼ cup sour cream with the remaining seasoning; spread evenly over top of tortilla stack. Sprinkle with tomato, olive slices and lettuce. Cute into wedges and serve with salsa.
